We slow cook mutton in two stages. First we boil mutton in an earthenware with a blend of spices for 60 mins. We then fry boiled mutton with masala blend and beetroot for 90 to 120 minutes in a brass or copper handi. We do not use cooker or aluminium in our kitchen.
