Cold coffee in Chandigarh is everywhere. Every café has a version of it on the menu. Most of them taste roughly the same — a blender, some instant coffee, ice, refined sugar, and a generous pour of processed dairy creamer. It does the job. It looks good on Instagram. And about twenty minutes later, you feel the sugar crash coming.
That is not what we make at Back to Source.
What Goes Into a Standard Cold Coffee — And What We Changed
The typical café cold coffee recipe has not changed much in years. Instant coffee or a cheap espresso shot, full-cream milk, white sugar or sugar syrup, ice, blender. Sometimes a scoop of ice cream on top to make it look premium. The result is sweet, heavy, and consistent — because when everything comes from a packet, it is easy to replicate.
We changed three things:
- No refined sugar — we use desi khaand, an unrefined whole cane sugar that dissolves clean and does not spike your blood sugar the way white sugar does
- No processed dairy creamer — real milk, nothing powdered or reconstituted
- No artificial flavouring — the coffee flavour comes from the coffee, not from a syrup

What Is Desi Khaand and Why Does It Matter
Desi khaand is unrefined cane sugar — the kind that was standard in Indian kitchens before white refined sugar took over. It retains the natural minerals and molasses from the sugarcane, which gives it a slightly deeper, rounder sweetness compared to white sugar.
It also does not hit the bloodstream the same way. The glycaemic impact is lower, which means the sweetness you taste in your cold coffee does not come with the spike-and-crash cycle that processed sugar delivers. You finish the drink and you still feel fine.
We use desi khaand across everything we make — biscuits, cakes, our in-house kombucha, and the cold coffee. It is one of the core ingredient choices that defines what Back to Source is.
The Cold Brew Option
Beyond the standard cold coffee, we also make cold brew — coffee that is steeped in cold water for 12 hours or more rather than brewed hot and chilled.
Cold brew is smoother and lower in acidity than regular coffee. The slow extraction pulls out the sweeter, more rounded notes of the coffee and leaves behind the harsh, bitter compounds that hot water extracts quickly. If you have ever found regular coffee too sharp or found that it unsettles your stomach, cold brew is worth trying — the experience is genuinely different.
Why Most Café Cold Coffees in Chandigarh Taste the Same
This is not a criticism — it is an economics question. When you are running a high-volume café and cold coffee is one of twenty drinks on the menu, the easiest path is a standardised mix: instant coffee or a commercial espresso blend, white sugar syrup from a bottle, and a dairy creamer that does not need refrigeration. It is consistent, it is fast, and it costs very little per cup.
The result is that most cold coffees across Chandigarh — from Sector 17 to Elante to the smaller neighbourhood cafés — taste roughly interchangeable. The differences are in the garnish and the glass, not in what is actually in the drink.
We are not interested in that version. Our cold coffee takes longer to make, costs us more per cup, and uses ingredients that require actual storage and care. That is the tradeoff we made — and it is why ours tastes different.
